Vegetarian BBQ: Portobello Burger with Eggplant, Grilled Onions and Sweet Potato Fries

Summer grilling at it's healthiest and best.

Teriyaki Marinated portobello mushroom:

Red Onions, Eggplant, and Sweet Potatoes rubbed with olive oil and garlic salt:

Vegetarian Barbecue:

Can't have a portobello burger with out a Side Salad

Portobello Burger Ingredients:
-Portobello Mushroom
-Red Onion
-Blue Cheese

-Soak eggplant in warm salt water for 30 minutes.
-Cook red onions, eggplant, and sweet potato in olive oil and garlic salt

Put all the vegetables on the bbq. Keep an eye on the grill. I burnt some sweet potatoes during the process.

Garnish Burger
Add lettuce, tomatoes, Avocado, and blue cheese to the portobello burger.

Side Salad Ingredients:
-Spring Mix
-Sunflower seeds
-Blue cheese
-Creamy poppy seed dressing (or your favorite)

Starting Fresh: Summer Gardening

The land has been cleared. Now it is time to plant fruits and vegetables in the garden. The first eatable plant I planted was strawberries. Strawberry plants will start producing fruit quickly and the fruit is extremely healthy. I've always been aware of how important it is to eat a variety of colorful fruits and vegetables. Lately natural non processed food is all I want to eat. Yet, I may be going over board, but non organic produce kind of scares me. My organic strawberry habit is getting expensive, so you have no idea what excitement the idea of home grown organic strawberries gives me.

Watch as I weed my garden and mix lot of Organic compost into the soil, so the soil is nutrient rich and fluffy.
