Yesterday I harvested a lot of zucchinis, cucumbers, tomatoes, eggplant and tomatillos:
From the harvest I decided to make
1. pasta sauce2. zucchini bread
3. salsa verde
4. grilled zucchini

Pasta Sause
Canning tomatoes is the perfect way to bring the taste of summer into the cooler winter months. Can tomatoes, salsa, pasta sauce and sundries tomatoes to use up the excess summer garden produce. I choose to make pasta sauce with my first huge tomato harvest. Canning for the long haul is a delicate process and you must follow the directly, or your food can become contaminated and unsafe to eat.
Zucchini Bread
I will admit zucchini isn't my favorite it didn't really get me excited, until I started researching and found a plethora of zucchini recipes. Today I choose to make zucchini bread, probably not the most original but a hardy stable in the summer gardening harvest.Salsa verde
Salsa Verde has been the stable of my summer cooking. I really lucked out and have two plants that are really producing. I've made over 5 batches of salsa verde and have used it for chips and salsa, marinate and dressings. Today I decided to grill the tomatillos, garlic, onions and peppers before blending them all. It brings out a really bold smokey taste compared to other methods of boiling or baking the tomatillos before blending.Grilled Yellow Zucchini
Lastly since the grill was already going I decided to chop up some yellow zucchini add a little garlic salt and grill them. My thoughts on zucchini are slowly changing and am excited for my next large harvest!What have you been doing with all your summer garden vegetables?
